Happy Valentine’s Day! This Valentine Cookie Recipe is perfect for anyone and everyone. For example. they are made of rice four and are therefore gluten-free. Therefore, they are allergy-friendly! Additionally, these cookies are low in sugar but high in delicious flavor! These Valentine cookies are my own twist on salpores de arroz. That is a classic from El Salvador.

Valentine Cookies – Allergy Friendly

These cookies are made with rice flour. There is no wheat in these cookies whatsoever. Therefore, these cookies are gluten-free. Further, these cookies are nut free. As a result, these cookies are allergy friendly!

My son unfortunately has a gluten allergy. Consequently, I find myself making these cookies for him often!

Low in Sugar, high in flavor

This recipe makes a dozen cookies. However, there is only half a cup of sugar in the whole recipe. That means each individual cookie is quite low in sugar! That is another reason I feel good about making these cookies for my son.

Don’t worry. Just because these cookies are low in sugar, does not mean they are low in flavor. Quite the contrary, these cookies have delicious flavor from the leche nido. Leche Nido is fortified instant milk or powdered milk. It contains 5 essential vitamins and minerals.

The butter, vanilla extract, and cinnamon bring lots of delicious flavor as well. These flavors compliment the powdered milk and rice flour.

Perfect for Valentine’s Day

Sure, you can make these cookies any time of year. But with a heart shaped cookie cutter and some red sugar, you can make these festive. Perfect for Valentines’s Day!

How to make Valentine Cookies

Firstly, preheat your oven to 350 degrees F. Secondly, mix all of your dry ingredients: rice flour, baking powder, sugar, leche nido, and cinnamon. Then add in the vanilla extract and the butter. Give it all a good mix! Add the egg last. Mix with your hands. Once it has formed a dough, make 12 equal-sized spheres. Pat them into discs. Using the heart-shaped cookie cutter, cut out heart-shaped. Add to your nonstick baking sheet. Sprinkle with red sugar to decorate. Bake for 20 minutes. Finally, enjoy!

Equipment

  • large mixing bowl

Ingredients
  

  • 2 cups rice flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 cup leche nido
  • 1/2 cup sugar
  • 1 stick butter softened/room temp
  • 1 tsp Mexican vanilla extract
  • red sugar enough to decorate cookies

Instructions
 

  • Preheat your oven to 350 degrees F.
  • In a large mixing bowl, combine all of the dry ingredients.
  • Stir well.
  • Now, add the vanilla extract and butter.
  • Mix well.
  • Then, add in the egg.
  • Mix until you have a dough-like texture.
  • Roll out the dough.
  • Use your heart-shaped cookie cutter to cut out 12 heart-shaped cookies.
  • Add the cookies to your baking sheet.
  • Sprinkle red sugar on top of the cookies to decorate.
  • Bake for 20 minutes.
  • Enjoy!
