Do you like pan dulce? Then you are going to love this delicious Salvadoran quesadilla recipe. Now, believe it or not, this quesadilla does not consist of melted cheese inside of a tortilla! That’s a Mexican quesadilla. Salvadoran quesadilla is totally different. Rather, Salvadoran quesadilla is a sweet bread or pan dulce. It is like a cross between pound cake and cheesecake. Topped with sesame seeds, this sweet bread is golden on the outside and moist on the inside.
Like most pan dulce, it is enjoyed with coffee. I adapted this recipe from my sister’s method of making Salvi quesadilla. Our mom says that this is a gringa way of making a quesadilla. In other words, Mama Rose insists that this, while tasty, is not totally authentic. Now, remember, my mom owned and operated a bakery when I was growing up! Therefore, Mama Rose is quite particular about her baking. However, I made this recipe for my suegra (mother-in-law) who is also Salvadoran. And, she loved it! In fact, after one bite, she said, mija si eres experta. Thus, this recipe has the mother-in-law seal of approval. I hope you like it as much as I do. And shoutout to my sister for the inspo!
