Now, before you come for me, let me clarify something. I have a recipe for authentic Mexican rice in my cookbook. On the other hand, this recipe right here is a great option if you are in a rush. For example, now that I am a new mom, sometimes it can be a mission to get dinner ready! So, making Mexican rice in a rice cooker allows me to set it and forget it. After all, Herencia Cookbook is all about hacks that help us enjoy the foods of our culture, in the easiest way possible!

 

Ingredients

  • 2 cups white rice
  • 2 cups water
  • 1 tablespoon Knorr caldo de tomate seasoning
  • 1/4 cup diced tomatoes
  • 1/4 cup diced onions
  • 1 tablespoon salsa (optional)
  • 1 tablespoon cooking oil

 

Directions

  • Firstly, coat the bottom of your rice cooker with cooking oil.
  • Secondly, rinse the rice until the water runs clear.
  • Add rice to the rice cooker.
  • Next, add Knorr seasoning, tomatoes, onions, and salsa.
  • Stir well.
  • After that, cover with 2 cups of water.
  • Cook the rice, following the settings on your rice cooker.
  • Enjoy!
