Heart Shaped Tortillas and Eggs for Valentines Day Breakfast
You can certainly enjoy huevos rancheros any time of year. They are a delicious breakfast! However, in this recipe, the special detail of the tortilla adds a special romantic twist. You see, I use a heart-shaped cookie cutter to cut out the center of the tortilla.
Ingredients
- 2 eggs
- 1 cup salsa of your choice (red salsa works great for this!)
- 2 tortillas
- Olive oil, twos tablespoons, divided
- Salt and pepper, to taste
- Heart-shaped cookie cutter
Directions
- Firstly, heat a pan on medium heat.
- Secondly, once warm, add one tablespoon oil.
- After about a minute, crack one egg directly onto the pan.
- Sprinkle with salt and pepper.
- Cook to your preference, over easy style.
- Repeat with the second egg.
- As the eggs cook, use a heart-shaped cookie cutter to cut out the center of the tortilla.
- Set the cooked eggs to the side, and add the remaining oil to the warm pan.
- Lightly fry the prepared tortilla in oil, so that it becomes crispy and crunchy.
- Plate the egg, cover with the tortilla, so that the egg peeps through the heart-shaped hole in the tortilla.
- Drizzle with salsa.
- Enjoy with cafe de olla!
