5 healthy breakfast ideas

Chia Pudding

Chia seeds are an ancient Aztec superfood. For instance, they are full of fiber, proteins, and omegas. An easy way to consume them is in chia pudding. The texture is similar to overnight oats. Prepare this breakfast the night before by soaking 2 tablespoons of chia in a cup of your plant-based milk of choice. In the morning, enjoy the chia pudding with fruit and nuts. Delicious and satisfying. Review the full recipe on my blog here.

Superfood Smoothie

I love smoothies in the morning because they are easy to take on the go. Additionally, the ingredients can be prepared the night before to make your morning even easier. I have two smoothie recipes in my cookbook. A free smoothie recipe is also available on my blog here.

Huevos Rancheros

Traditional Latin recipes can be healthy too. For example, huevos rancheros contain tortilla, eggs, and salsa. This mix of complex carbs, protein, and veggies will keep you full until lunch. It is a balanced meal that offers a variety of nutrients! Check out my huevos rancheros recipe here.

Protein Pancakes

If you have picky eaters, this is a great way to give them a sweet breakfast that is full of fruit and protein. These 3 ingredient pancakes will delight your taste buds. In a blender, combine half a banana, 2 eggs, and some cinnamon. Blend until smooth. Then, on medium heat, warm a pan. Once warm, coat it evenly with cooking spray. Afterwards, pour the batter and cook for one minute on each side. Finally, top with honey, syrup, or powdered sugar. I personally like to enjoy mine with berries. This recipe makes 3 pancakes.

Atole de avena

Atole de avena is warm and nourishing. I make it with skim milk for calcium and protein. The oats offer complex carbs. This drinkable oatmeal will keep you full until lunch. Mix in some chia, and powdered almond butter, or even top it with a few berries to make it even more nutrient dense! Check out a simple way to make atole de avena here.
